In case you’re a savage and don’t know how to face artichokes: the larger, outside layer of petals have flesh on the inside which you scrape off with your teeth. The smaller inside petals are entirely edible.
• 3 Baby Artichokes
• 3 TSP butter
• Half a Lemon
Cut off the stem and an inch off the top of the chokes. Squeeze lemon juice over top to prevent discolouration, they brown almost instantly. Add 1 inch of water to your steamer, place the chokes in the basket, top with salt and steam for 20 minutes.
Brown butter for five minutes and add freshly squeezed lemon juice, pour over top of chokes.
