BBQ Chicken with Lemon, Basil Drizzle

It’s BBQ season and I couldn’t be more ecstatic. For years I had a fear of barbequing, strange since both my parents are grill addicts. But two years ago I came across this recipe, lit the shotty communal BBQ in our backyard and haven’t looked back since. This is by far my favourite chicken dish – ever.

 The Marinade is my usual:

  • Organic Apple Cider Vinegar
  • Grainy Dijon Mustard
  • Olive Oil
  • Garlic
  • S&P

Lemon & Basil Drizzle

  • Four lemons – depends on how many portions you are serving
  • Splash of Olive Oil
  • 2 Tsp of Sugar – depends on the bitterness of the lemons, you might want to add more.
  • Pinch of Salt
  • Hand full of fresh Basil, torn into little pieces

Marinade the chicken for a couple hours before cooking, BBQ and drizzle the Lemon, Basil Sauce before serving.
